AUSSIE TARTS


Ingredients:


For Pastry: 
125g butter 
3 teaspoons vegemite 
1 and a half cups plain flour 
1 egg 
1-2 teaspoons water 

For Filling: 
250g light Philly or cottage cheese 
2 eggs 
2 teaspoons Vegemite 
One quarter of a cup of parsley 
One quarter of a cup of grated parmesan 
1 teaspoon nutmeg 
pinch black pepper 
250g pkt frozen spinach (thawed)

Procedure: 
Pastry 
1. Use a food processor to combine butter, vegemite and plain flour until mixture resembles fine breadcrumbs. 
2. Add egg and water if required to form a smooth dough. 
3. Refrigerate 30 minutes. 
4. Roll out dough on a lightly floured board. 
5. Cut out rounds and place in flan tins. 

Filling: 
1. Cream Philly or cottage cheese with eggs and Vegemite with an electric beater. 
2. Add parsley, grated parmesan, nutmeg, pinch black pepper and thawed spinach. Mix well. 
Add filling to pastry and bake in an electric oven 200 celsius for 20-25 minutes, or until firm in the centre.

LAMINGTONS (one of Tracey's favorites)

Another downunder phenomena which is guaranteed to be in every cake shop and at most Ozzie or Kiwi parties. This dessert can be messy to make but it's worth it!

Cake:
125g butter 
2/3 cup sugar 
2 eggs 
2 cups self raising flour 
1/2 tsp salt  
1/3 cup milk (approx) 
1/2 tsp vanilla -30g butter

Icing:
1/2 cup boiling water (approx)
3 cups icing sugar 
1/3 cup coca 
1/2 tsp vanilla 
2 cups desiccated coconut

Grease, flour and paper line the base of a baking tray. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Sift flour and salt. Add alternatively with milk to mixture. Add vanilla. Blend well, but do not over-beat. Add a little more milk if necessary to form a soft dropping consistency. 

Bake at 350 F for 25 to 35 minutes, or until toothpick inserted in centre comes out clean. Turn out and cool on a cake rack. Cut into 30 squares. Dip each square in chocolate icing and roll in coconut. 

To make icing, melt butter in 1/4 cup boiling water. Sift icing sugar with cocoa and add liquid, mixing well. Add vanilla. The icing must be thin so that 
squares of cake can be readily coated. Add sufficient boiling water to form this consistency. Dip each square in icing then roll in coconut and leave to dry 
on a cake rack.

A tidbit from Tracey A little note if you will---the Lamington cake can be a box mix if you wish but you will get less breaking of the cubes if you let them sit overnight and become a little stale. I know that's not something that you normally would do, but it just helps to keep it from falling apart. Just a little helpful hint so people are prepared for what could happen. It's actual origins are supposed to be just that---Lady Lamington (or whatever her title was) is supposed to have had company that was, I think, unexpected and didn't have anything to serve; so she got some day old cake she had and improvised. That's where they came from---not being prepared for company.

COCONUT ICE

Easy and fast

Ingredients:
2 c sugar
1/2 c milk
6 oz. dessicated coconut
a pinch of cream of tartar
1 drop red food coloring

Method:
Place sugar and milk in saucepan. Stir until dissolved. 
Add cream of tartar and bring to a boil. Boil for 5 minutes, then remove from heat and stir until mixture begins to thicken and turn white. Add coconut. 
Divide mixture into 2 equal parts.
 
Turn one half onto greased square pan and let cool. 

To the other half, add a drop of red food coloring to achieve a pink color. Pour this mixture on top of the white mixture. 
Let cool, then slice into squares.

ANZAC BISCUITS

Along-time favorite. They most likely got their name from being made for, and sent to the Aussie soldiers of the Australian & New Zealand Army Corp.
Other Anzac Biscuit recipes have variations on the same theme.

You will need:

1 cup plain flour
1 cup rolled oats
3/4 cup caster sugar (powdered sugar)
125 g butter
1 tablespoon golden syrup (golden corn syrup)
1 1/2 teaspoons bicarbonate of soda
2 tablespoons boiling water

Method:

1. Preheat oven to slow 150 Celsius. Brush 2 oven trays with melted butter. Place flour, oats, coconut and sugar in a large mixing bowl, stir until combined.

2. combine butter and golden syrup in small pan, stir over high heat until melted. Mix soda with boiling water, add to melted butter and syrup. Add to flour mixture,

stir until combined.

3. Shape level tablespoonful of mixture into balls and flatten slightly; Place onto prepared trays, about 6 cm apart.

4. Bake 15-20 minutes or until crisp and golden. Remove from oven, stand 2 minutes. Loosen biscuits and cool on wire rack.

MANGO BREAD

You will need:

180g (6 1/4 oz) butter
1 cup fine sugar
4 eggs
170g (6 oz) can mango pulp
1/3 cup sour cream
2 cups self-raising flour
1/2 cup chopped dried mango

Method:

Lightly grease a 15cm x 25cm (6" x 9.8") loaf pan. Beat butter and sugar until light and fluffy. Beat in eggs, one at a time.

Transfer mixture to large bowl, stir in remaining ingredients.

Spread mixture into prepared pan, bake at 180°C (350°F) for 50 minutes, or until lightly brown and firm. Stand bread in pan for 5 minutes, turn onto wire rack

to cool.

EASY AUSTRALIAN RICE PUDDING

Servings: 4 servings

Ingredients:
1/3 cup sugar
3-1/2 cups milk
1/2 cup water
1 cup rice
1 tsp. vanilla essence

Directions:
Place the sugar and milk in a heavy bottomed saucepan (no lid) and on medium heat bring to the boil.

When just starting to boil tip in the water and rice.

Bring back to the boil and simmer for 30 minutes stirring occasionally or until thickened. 30 minutes is usually enough.

Turn off heat and mix in the vanilla essence.

Pour into a dish and let cool.

SCRAMBELED EGGS . . . a la LINDA

Ingredients:

2 eggs (per person), 2 tbsp milk (per person), chopped parsley, 2 rashers (strips) of bacon (per person), 2 tbsp grated cheese (per person).

 

Method:

Dice the bacon and fry till cooked, but still soft, while this is cooking, beat the eggs and milk together, add chopped parsley, salt & pepper (to taste) and the cheese.

Drain bacon, return to pan and add the egg mixture, fold (don't stir) it's best to use a fork for this! Cook till there are no runny parts, serve on or with toast! (easy)

You can also add, diced tomatoes, or any herbs you like!

BBQ MUSHROOMS


 You will need:


* Medium to large size mushrooms, stems removed and washed. Reserve the nicest looking ones for presentation.
* Mushrooms, chopped
* Bacon, chopped into small pieces.
* Onion, chopped.
* Cooking oil or butter.
 
Method:


Fry bacon, onion and mushrooms in oil or butter till soft. Spoon into raw mushrooms and grill on BBQ till softened. That's all you do...and they taste terrific!

Great with steak, sausages, chicken, fish and salad.

APRICOT BRAN LOAF


A delicious, healthy, "bran loaf" that's easy to make and delicious to eat. And it'll keep you regular, too!

Ingredients:


1 Cup of AllBran 
1/2 a Cup of chopped, dried apricots 
1 and a 1/4 Cups of milk 
1/2 a Cup of sultanas 
1/4 of a Cup of sugar 
1 and a 1/2 Cups of Self Raising Flour 

 

Method:


Mix the apricots, AllBran, sultanas, sugar and milk in a bowl. Let stand for 2 hours or overnight. Grease a loaf tin and dust with fine breadcrumbs. Add the sifted flour to the bran mixture and mix well and place the mixture in the loaf tin. Bake at 175C (350F) for about an hour, or until a skewer comes out clean.

To serve:


Cut into slices and serve warm or cold. Hint: It's extra nice when spread with butter!

SAVOURY MINCE LETTUCE CUPS

Prep. Time: 10 minutes

Total Time: 50 minutes

Ingredients:

17-1/2 oz. beef mince
15-3/4 oz. bolognaise sauce
Carrot, mushrooms, celery and zucchini, finely chopped
Baby cos lettuce leaves


Directions:


Brown 500 g. beef mince in a frypan. Stir in a 450 g. jar of bolognaise sauce with finely chopped carrot, mushrooms, celery and zucchini.

Cover and simmer gently for 20 minutes. Serve in baby cos lettuce leaves.

BACON STIR FRY


Stir fry dishes are healthy, easy to prepare, and delicious.


Ingredients:
2-3 strips bacon (Canadian style)
1 bell pepper (use red & green for more color)
2 small onions
1 carrot
8-10 snow peas
4 mushrooms
2 Tbsp. satay seasoning sauce (e.g. MasterFoods brand)


Method:
Prepare vegetables by cutting into bite-size pieces. Cut bacon into thin strips and fry on medium heat until it start to become crispy. Add vegetables and fry until they become tender, stirring constantly. Mix satay sauce with equal parts water, pour over vegetables & bacon and fry 2 minutes. Be sure not to overcook.

Serve hot on beds of freshly prepared rice.

PAVLOVA
 
 
 
 
Ingredients:
·4 egg whites, at room temperature
·5 ml (1 tsp) vanilla
·1 ml (1/4 tsp) cream of tartar or 5ml or 1 tsp lemon juice
·1 ml (1/4 tsp) salt
·250 ml (1 cup) sugar
·250 ml (1 cup) whipping cream (whipped)
500 ml (2 cups) mixed fresh fruit (strawberries, kiwifruit, passionfruit pulp, etc)
 
Method:
Line a baking sheet with foil. Draw a 23cm (9-inch) circle on the foil.
In a large glass or metal bowl, beat egg whites, vanilla, cream of tartar and salt at high speed until soft peaks form. Gradually beat in sugar, 25ml (2 tbsp) at a time, beating well after each addition and continue beating until stiff, glossy peaks form. Spoon onto prepared cookie sheet within your marked circle, mounding higher around the edge.
Bake in preheated oven at 120 degrees Celsius (250 degrees Fahrenheit) for 1-1/4 to 1-1/2 hours until crisp on outside and firm to the touch. Turn off heat and allow to cool with door propped open. Pavlova can be stored in cool, airtight container for several days.
To Serve: spread whipped cream in centre of shell and top with fresh fruit. Chill until serving time.
